For slicing fruit and small foods
Like the Santoku and the chef's knife, a utility knife is a multi-purpose knife suitable for peeling and detailing. It has a relatively short, easy-to-handle blade. Very effective for fruit and peeling. For the main knife, a Santoku or chef's knife, and for the second knife, a utility knife is highly recommended.
Aogami Super Steel
The core is made from Aogami Super steel, clad with stainless steel on both sides.
Its key features are exceptional sharpness and long-lasting edge retention. Once properly sharpened, it maintains a smooth, satisfying cutting edge for a long time, making it ideal for those who cook frequently.
Because the carbon steel is exposed only around the cutting edge and the rest of the blade is clad in stainless steel, it is easier to maintain than a traditional carbon steel knife.
The cutting edge should still be thoroughly dried after each use, but this construction makes it an approachable first choice for anyone interested in trying a carbon steel knife while concerned about rust.

After significantly increasing hardness through quenching, it is adjusted through tempering to enhance not only hardness but also toughness and chip resistance. Rather than merely pursuing hardness, it is finished with a balance of edge retention, ease of sharpening, toughness, and chip resistance, making it ideal for those who want to enjoy sharpness for a long time while continuing to sharpen it themselves.
Beautiful Blade Shape with Shinogi
The beautiful blade shape reminiscent of a traditional Japanese knife with shinogi is a standout feature. The cutting edge is not only finished thinly but also polished by changing the direction of the grind to smooth out the fine surface irregularities. Additionally, the flat of the blade has a slight bulge to minimize contact with ingredients, enhancing the ease of entry and exit when cutting.

The handle is made of durable oak and finished with clear lacquer. FAQ
Yes, but for online orders, we offer a free engraving service for knives only. Please select the desired engraving option, enter text and add the knife to cart. Engraving for products other than knives is only available at our physical store at Kappabashi, Tokyo.
Most of the chipping can be repaired by re-sharpening the blade. We offer a fee-based knife sharpening service. If you have any questions, please feel free to ask us using the inquiry form. Blades can chip by cutting hard ingredients such as bones, seeds or frozen food, dropping and mishandling, or stabbing into hard cutting boards.
All knives we handle can be repaired with the exception of knives that are severely damaged. Repairing chipping and removing rust will restore sharpness and allow you to use your knives for a longer period of time. We also offer a fee-based knife sharpening service.
Please note we may not be able to repair knives with unknown blade materials, such as knives purchased at other stores.
